Hard to explain the flavor. It isn’t terrible buts it definitely is not preferable either. Probably make an ok sausage if it was ground up and heavily seasoned. You only get like 10lbs of meat, they ended up being covered in fleas which we didn’t recognize immediately because we were cleaning them in the dark.
Overall it was fun to do once, but if I seen em again I’d pass and wait for the pigs.
